Fill a small pot with water and place it on a medium-high heat until the water begins to boil. Pour in the vinegar and mix with a whisk to create a vortex.

Add one egg and let it boil for 3 minutes.

Then carefully remove it with a slotted spoon and leave it on absorbent paper. We repeat the same process with the second egg.

Bake the slices of bread in the toaster or on the grill.

05.

Cut the avocado in half, remove the pit and skin and transfer to a bowl. With a fork, melt the avocado well and add the lime juice, olive oil, salt, pepper and mix well.

06.

Serve by spreading the avocado and the poached egg on the slices of toasted bread.
